Cask 16/BY19 is a Grand Cru Burgundy finish from Glendalough's Single Cask series, blended Irish whiskey bottled in 2019 for the German market, 366 bottles at 42%. The Wicklow bonder pairs sourced Irish spirit with wine casks from named French terroirs, an approach far more common in Scotch than in Irish blends.
The blend was matured in ex-bourbon wood, giving toffee, vanilla and light cereal sweetness, before the Burgundy cask layered in red berries, plum and cocoa with a delicate winey dryness. The grain component keeps everything soft and creamy while the Pinot Noir fruit does the decorating. Bottled at an approachable strength, it drinks as a fruit forward, gently spiced Irish whiskey, the Burgundy influence clearest in a finish of red fruit and dry cocoa.
