Description
This is cask 2/3 of Glendalough's 25 Years Old, the oldest whiskey the Wicklow bonder has bottled, released for the Italian market at 46%. The malt was distilled elsewhere in Ireland long before Glendalough existed and matured for a quarter century, the company's role the old bonder one of selecting, finishing and bottling.
Bourbon and Oloroso sherry barrels shared the long maturation, and the whiskey then finished in Irish oak, a rarity in coopering that Glendalough sources from native woodland. Expect fig, dark honey and toasted walnut at the core, vanilla and orchard fruit still audible from the bourbon wood, and a top layer of clove and toasty native oak spice. The age reads in the mouthfeel more than in heaviness, rounded and slow, with a finish that fades through dried fruit into polished wood.
