Glendalough bottled cask 1/3 of its 25 Years Old single malt in 2019 for Italy at 46%, an edition of 380 bottles. Like the rest of the Wicklow house's oldest range, the malt is sourced, distilled in Ireland a quarter century before and brought on by the bonder's cask work rather than by its own young stills.
The maturation combined ex-bourbon and Oloroso sherry barrels before a finish in Irish oak, the native hardwood Glendalough has championed. Sherry wood dominates the fruit, raisin, fig and date, while the bourbon barrels keep vanilla and honey underneath and the Irish oak adds toasted spice and a dry herbal edge. Twenty five years give it a dense, waxy weight, and the finish stretches out on walnut, dark chocolate and oak.
