Description
Signatory Vintage bottled this Glencadam, an 8 year old, distilled in 2011, from cask 800137, at 65.4%, one of 227 bottles. Glencadam is a Highland single malt, long a core flavour of the Ballantine's blend. It was founded in 1825 by the merchant George Cooper, soon after the Excise Act made licensed distilling viable. Its stills carry lyne arms angled upward, raising the reflux for a lighter, fruitier spirit. Its single malts are bottled at 46 percent, without chill filtration or added colour. In the 1890s the Glasgow blender Gilmour Thomson used its malt in a Royal blend said to be favoured by Edward VII.
The spirit was worked unhurried through the stillhouse, building a soft malt of orchard fruit and a creamy sweetness. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Young and extractive, the cask sheds vanillin and toasted sugars over the clean, fruity spirit. A soft, creamy texture from the spirit carries through the maturation.
At a hearty 65.4% it carries real weight. Pear, apple and a soft cream, lifted by a soft oak. Soft pear and a creamy vanilla sit behind the cask. The finish runs delicate, fruity and creamy. This is a fruity, easy going Highland single malt.
