    An 18 year old Glencadam from Gordon and MacPhail, 1987, at 43%. Fresh and fruity, all green apple and a creamy note. Revived under Angus Dundee ownership in 2003 after a three year closure. Water comes from Loch Lee in the Cairngorms. Founded in 1825 by the merchant George Cooper, in the eastern Highlands. This is a light, creamy Highland single malt.

    A Glencadam of an 18 year old chosen by Gordon and MacPhail, distilled in 1987, at 43%. Glencadam is a gentle, fruity Highland malt of orchard and tropical fruit. In the 1890s the Glasgow blender Gilmour Thomson used its malt in a Royal blend said to be favoured by Edward VII. Most of its make long went to blends; bottled single malt Glencadam was rare until a full range arrived.

    It was distilled from unpeated malt, for a fine, fruity spirit with a light body. A refill bourbon hogshead held it, keeping the fresh, fruity character to the fore. Into oxidative maturity, slow air builds tropical esters of mango and pineapple over a creamy depth. A soft, creamy texture from the spirit carries through the maturation. Years in oak deepen the spirit to old gold, the body growing rounder and creamier with time. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.

    At 43% it is smooth and fruity. Pear, apple and a soft cream, lifted by a soft oak. A light orchard fruit and a soft spice give it shape. Green apple, citrus and a soft oak see it out. This is a gently fruity, creamy Highland malt.
