    A 10 year old Glencadam from Signatory Vintage, 2011, at 61.5%, a festival bottling. A light orchard fruit and citrus. Its upward angled lyne arms raise the reflux for a lighter, fruitier spirit. Water comes from Loch Lee in the Cairngorms. The only distillery in Angus and the last in Brechin. This is a fresh, fruity Highland single malt.

    Chosen by Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, this a 10 year old Glencadam, distilled in 2011, from cask 800115, at 61.5%, a festival cask. Glencadam is a Highland single malt whose upward angled lyne arms give a light, fruity spirit. Its water comes from Loch Lee in the Cairngorms, piped down through the River Esk catchment. It was founded in 1825 by the merchant George Cooper, soon after the Excise Act made licensed distilling viable.

    Distilled in onion shaped copper pot stills, for a creamy, fruity make with real elegance. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the fruit. In integration coconut and vanilla knit with the malt, the pear softening towards a creamy honey. Maturation runs slow and even in the cool, racked Highland warehouses. Years in oak deepen the spirit to old gold, the body growing rounder and creamier with time.

    At a natural 61.5% it is full and creamy. Apple, apricot and a gentle spice, lifted by a soft oak. The body is light and creamy, the fruit lifted by a soft oak. A fresh finish closes on pear and a soft oak. This is a light, creamy Highland single malt.
