Chosen by Wilson and Morgan, the Italian house from Treviso, this a 21 year old Glenburgie, distilled in 1992, from cask 4895-4900, at 50%, one of 403 bottles. Glenburgie is a Speyside single malt made near Alves in Moray, east of Forres. It has belonged to Chivas Brothers, part of Pernod Ricard, since 2005. It was expanded to six stills after the rebuild, one of the bigger distilleries in the group.
The spirit was taken gently through wash and spirit stills, giving a fragrant, orchard led Speyside spirit. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Through oxidative maturity the esters concentrate, the apple and pear turning to a waxy honey and soft tropical fruit. Years in oak deepen the spirit to old gold, the body growing rounder and waxier with time. Active wood frames the fruit without ever crowding the Speyside spirit. A soft waxiness from the spirit carries a thread through the maturation.
At a natural 50% it is full and waxy. Pear, honey and a creamy oak, with a gentle oak sweetness. The body is light and clean, the fruit lifted by a soft oak. The finish is light, fruity and clean. This is the fragrant blending malt of Alves.
