This GlenAllachie was bottled by Dràm Mòr, an 8 year old, at 53.8%. Raisin, chocolate and a warm spice run through it, with raisin, date and treacle from the cask. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. It runs very long fermentations for a thick, fruity, ester rich spirit. This is a Speyside single malt of real standing.

A GlenAllachie of an 8 year old chosen by Dràm Mòr, distilled in 2016, from cask 210, at 53.8%, one of 194 bottles. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine. It was designed almost entirely gravity fed, an efficient plant for its time. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes.
Worked unhurried through the stillhouse, shaping a rich Speyside body with real weight. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. Young and extractive, the cask sheds vanillin and toasted sugars over the full, fruity spirit. The casks are picked closely, the wood matched to the rich GlenAllachie make. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At a hearty 53.8% it carries real weight. A rich orchard sweetness and dark sugar, with raisin, date and treacle from the cask. It is full and fruity, the spirit carrying the cask. Dried fruit, spice and a soft oak see it out. This is a deep, sherried Speyside single malt.
