This GlenAllachie was bottled by Cadenhead, a 16 year old, at 63.5%. Deep and dark, all baked apple, honey and a chocolate. Built for the blend boom of the 1960s, now a sherry led single malt. Its four stills carry downward angled lyne arms for a fuller spirit. This is a rich Speyside malt of dried fruit and chocolate.

A 16 year old GlenAllachie from Cadenhead, distilled in 2008, at 63.5%. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition.
Run slowly off the spirit still, for a thick, ester rich spirit the casks then deepen. Maturation came in ex-Bourbon wood, the oak gentle behind the spirit. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. The full spirit deepens with time, the cask drawing out its darker register. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
Bottled at a cask strength 63.5%, it is deep and concentrated. A rich, sherried sweetness, with a warm oak spice. Beneath it run dried fruit, dark sugar and a warm spice. The finish runs long, full and warming. This is the sherry led malt of Aberlour.
