Description
Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this GlenAllachie, distilled in 2008, from cask 900367, at 63.7%, one of 647 bottles. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was designed almost entirely gravity fed, an efficient plant for its time. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.
The spirit was distilled to a full, generous cut, for a full make built to take active wood. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the fruit. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The casks are picked closely, the wood matched to the rich GlenAllachie make. The full bodied spirit takes active wood well, carrying its dark sugars through the years.
At 63.7%, undiluted, it is dark and full. Orange, raisin and a treacle edge, with a soft vanilla from the oak. It is full and fruity, the spirit carrying the cask. The finish is long, rich and spiced. This is a dark, fruity Speyside single malt.
