Description
This GlenAllachie was bottled by Duncan Taylor, a 12 year old, distilled in 2008, from cask 309007931, at 54.3%, one of 276 bottles. GlenAllachie is a Speyside single malt, long a blending malt and now a sherry led name in its own right. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
Worked unhurried through the stillhouse, for a thick, ester rich spirit the casks then deepen. It was matured in an Oloroso cask, the wood working deep into the malt. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full bodied spirit takes active wood well, carrying its dark sugars through the years. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The wood frames the spirit without ever stripping the full Speyside body.
Bottled at a cask strength 54.3%, it is deep and concentrated. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is a deep, sherried Speyside single malt.
