Glen Moray from the distillery, a 25 year old, from 1988, at 43%, 2700 bottles in all. Glen Moray is a Speyside single malt and a pioneer of wine cask finishing. Its light, fresh spirit suits a wide range of cask finishes, from sherry to rum.

It was drawn off the stills for a clean, fruity Speyside spirit, for a clean make of orchard fruit and a soft honey. Finished in a Port cask, the wood building over the fruity, light spirit. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, dried fruit. A gentle maturation suits the light make, the orchard fruit growing richer with time. It closed in 1910 and reopened in 1923 under Macdonald and Muir of Glenmorangie. It has been owned since 2008 by the French house La Martiniquaise. Years in oak round the spirit, the green apple deepening to honey and dried fruit.

Bottled at 43%, it is rounded. A light, orchard fruit and toffee, with red berry, plum and a dry spice from the cask. It is fresh and fruity, the light spirit shining through. A fresh finish ends on apple and a soft oak. This is a Speyside single malt of real value.
