    A 20 year old Glen Moray from the bottler Sansibar, 1996, at 49.2%. Green apple, vanilla and a soft honey run through it, with dried fruit, fig and walnut from the cask. Most of its make matures in American oak before any cask finish. Glen Moray is a Speyside malt from Elgin, founded in 1897 in a former brewery. This is an approachable Speyside single malt from Elgin.

    From the bottler Sansibar, a 20 year old Glen Moray, distilled in 1996, bottled at 49.2%, one of 310 bottles. Glen Moray is a Speyside single malt and a pioneer of wine cask finishing. Its make is a key malt in the Cutty Sark and Label 5 blends.

    It was run through the stills on River Lossie water for a light make, for a light, easy spirit with a soft malt. Maturation finished in an Oloroso cask, layered over the light Glen Moray make. Through oxidative maturity esters concentrate, the apple turning honeyed and a soft dried fruit creeping in. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. It runs a large still house at Elgin, expanded over the years to meet demand. It was a pioneer of wine cask finishing, working with Chardonnay casks back in the 1990s. It was built on Gallow Hill at Elgin, the old site of the town's hangings.

    At cask strength 49.2% it is full bodied. Apple, pear and a soft vanilla, with dried fruit, fig and walnut from the cask. It is fresh and fruity, the light spirit shining through. The finish is rounded, fruity and clean. This is Glen Moray's clean, accessible Speyside style.
