Glen Moray from the distillery, a 21 year old, from 1994, cask 26, at 54%. Glen Moray is a Speyside single malt from La Martiniquaise, light and approachable in style. Most of its malt matures first in American oak ex-Bourbon before any cask finish.
The spirit was distilled light and fruity in the Glen Moray style, for the light, fruity make Glen Moray is known for. Maturation finished in a Madeira cask, layered over the light Glen Moray make. At oxidative maturity aldehydes lend a nutty edge while ellagitannins add a gentle, drying grip over the fruit. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. The cool Speyside air gives a slow, even maturation in the Glen Moray warehouses at Elgin. Long ageing turns the fresh apple towards dried fruit, honey and a soft spice. Years in oak round the spirit, the green apple deepening to honey and dried fruit.
At a hearty 54% it carries real weight. Green apple, vanilla and a soft honey, with a nutty, raisined sweetness from the cask. The mouthfeel is light, the fruit carried on a clean body. The close is light and clean, fruit over a gentle oak. This is Glen Moray's clean, accessible Speyside style.
