A thirty-two year old single cask of New Yarmouth, deeply woody and overripe with vanilla, tobacco and a sweet edge from decades in ex-bourbon oak, bottled unsweetened at 58.5% by Ferrer from a 1994 distillation.
Description
Ferrer's New Yarmouth from the Collection One Cask reaches back to a 1994 distillation, an extraordinary age for a Jamaican rum and a snapshot of a distillery that has lately become a high-ester darling of independent bottlers. New Yarmouth runs pot and column at the Clarendon site, and its robust, funky pot-still spirit has earned a following among those chasing the island's bigger flavours.
Thirty-two years in ex-bourbon oak, much of that extraction concentrated by long maturation, push the wood well forward. The nose is woody and overripe with vanilla, and the palate carries that oak alongside tobacco, more vanilla and a natural sweetness despite the absence of any added sugar. At 58.5% it holds its strength gracefully for its age, the fruit of youth now folded into deep, resinous, cigar-box maturity. A single cask aimed squarely at drinkers who prize very old tropical Jamaican rum and the way time reshapes the funk into something darker and more contemplative.
