Description
El Mayor Tequila Blanco is a 100% Blue Weber blanco produced at Destiladora González Lux, NOM 1603, in Arandas in the southern Los Altos highlands of Jalisco. Bottled unaged at 40%, it shows the agave without cask influence, the clearest read of the distillery's hand and the highland fruit and floral character of the red-clay terroir.
The agave is cooked slowly in low-pressure autoclaves over roughly a day or two rather than the few hours high-pressure cooking would take, which keeps the spirit notably mild and soft. It is milled on a roller mill, fermented in stainless steel without fibre and twice distilled in a stainless pot with a copper coil. The nose is clean agave with floral and spicy undertones, the palate crisp and full of agave with floral and peppery notes, closing dry and gently warm with a touch of pepper.
