This official Eden Mill, at 46.5%. Eden Mill is a young Lowland single malt from Scotland's first combined brewery and distillery. A new distillery opened on the same Eden Campus site, continuing the small batch whisky.
Run through the small copper pot stills on River Eden water, the brewing heritage lending a malty, cereal character. Finished in a Pedro Ximenez cask, the wood working into the young malt. No age is given, but vanillin vanilla and a bright apple mark it as young Eden Mill. The cool coastal air of the Eden estuary gives a slow, gentle maturation. It uses a range of cask types to shape the young spirit, from ex-Bourbon to sherry, rum and Madeira. The estuary setting gives a low angel's share, around two percent a year. Its make matures in racked warehouses at Guardbridge, a few miles from St Andrews. The young spirit and the active oak grow together over the early years.
Reduced to 46.5%, it is mellow. A fresh, fruity sweetness, with raisin, date and treacle from the cask. Beneath it run green apple, cereal and a soft vanilla. Apple, cereal and a soft oak see out the finish. This is a young, characterful Lowland single malt.
