A 3 year old Eden Mill from the Scotch Malt Whisky Society, distilled in 2015, from cask 136.1, bottled at 61.2%, one of 297 bottles. Eden Mill is a Lowland single malt from the Eden estuary, distilled in small batches since 2014. It uses a range of cask types to shape the young spirit, from ex-Bourbon to sherry, rum and Madeira.
It was mashed with a brewer's choice of malts and distilled slowly, the brewing heritage lending a malty, cereal character. An ex-Bourbon barrel held it, vanillin lending vanilla under the cereal. Young but lively, the brewing malts give a cereal depth, ethyl esters lending green apple over a light vanillin vanilla. The brewing heritage and a choice of malts give the make a cereal depth. The slow coastal maturation suits the small batch, the cask and spirit growing together. The light Lowland make leans on the cask for depth while it is young. It became Scotland's first combined brewery and distillery, on the University of St Andrews Eden Campus.
At its natural 61.2% it is concentrated. A fresh, fruity sweetness, with a soft vanilla from the oak. Pear, cereal and a creamy vanilla fill the middle. It finishes fresh, malty and clean. This is a fresh, young Lowland single malt.
