La Maison du Rhum, bottled by Dugas, presents this No. 3 release, a thirteen year old Paraguayan rum from the 2007 vintage finished in fino sherry and held at 45%. The dry fino cask is the defining choice here, lending floral and herbal nuance to an otherwise sweet natured spirit.
Distilled on a column still from cane honey, the rum carries vanilla and milk chocolate sweetness alongside grapes, florals and herbs on the nose, with an earthy, herbal palate of thyme and menthol. The finish runs long, woody and round with a chamomile and faintly nutty edge. The fino finish is well judged against the sweetness, and there is no added sugar, though the rum reads softly sweet on its own. It makes a gentle, characterful sipper, even if some find it dear for what it offers.
