Description
A Dufftown of a 12 year old chosen by the Italian bottler Wilson and Morgan, distilled in 1992, bottled at 46%. Dufftown is a smooth, approachable Speyside malt from the town with the most distilleries in Scotland. In recent years the ferment was lengthened and the wort run clear for a grassier make.
It was made on Conval Hills water and condensed in shell and tube condensers, giving the smooth, approachable Speyside spirit. Maturation came in a Port cask, layered over the smooth Dufftown make. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and pear. The cool Speyside air gives a slow, even maturation in the Dufftown warehouses. The Singleton of Dufftown is matured in a mix of ex-Bourbon and ex-Sherry oak. Eight warehouses on site hold close to 100,000 casks of maturing malt.
At 46% it is clean and soft. Honey, nut and a touch of spice, with red berry, plum and a dry spice from the cask. The mouthfeel is smooth, the fruit carried on a malty body. The close is smooth, fruit over a gentle, spicy oak. This is Dufftown's nutty, malty Speyside style.
