Description
Don Amado Reposado is an Espadín mezcal made by the Arellanes family at their distillery in Santa Catarina Minas, the clay pot heartland of Oaxaca. It builds on the house Rústico joven and takes its name from an old Oaxacan habit of resting mezcal in brandy wood, a style that leans warm and approachable rather than rugged.
Halved and quartered Espadín hearts are roasted four days over guamúchil and mesquite, crushed by blade mill, then fermented with the agave fibres in large pine vats on airborne yeast for a rich agave body. The must is twice distilled in small wood fired clay pot stills to 53% and reduced to 45% with demineralised water. Time in American oak that once held Pedro Domecq brandy lifts vanilla, soft caramel and a baking spice edge over moderate roasting smoke, closing dry and gently spiced.
