Description
Dom Pérignon is the prestige vintage cuvee of Champagne Moët et Chandon, produced only in years judged strong enough to carry the name and always from a single harvest. This rosé from the 2009 vintage blends Pinot Noir with Chardonnay, with the pink colour and red-fruit weight coming from Pinot Noir. It is made by the traditional method and aged for many years on the lees before release, a long maturation that gives the wine its depth, fine bead and savoury complexity beneath the fruit.
The colour is a pale copper to salmon pink with a very fine, persistent bead. The nose combines strawberry, raspberry and cherry with toasted bread and a praline, faintly smoky depth. The palate is dry and layered, the red fruit framed by a creamy mousse, a red-currant tang and a long, mineral finish. Serve at around ten to twelve degrees in a white-wine glass to show the aromatics. It suits duck, salmon, game birds and mature cheeses.
