Description
Dom Pérignon is the prestige vintage cuvee of Champagne Moët et Chandon, made only in years strong enough to carry the name and always from one harvest. This rosé from the celebrated 2008 vintage arrives in the Lady Gaga collaboration tin, but the wine within is the classic vintage rosé, blending Pinot Noir with Chardonnay so the pink colour and red-fruit weight come from the Pinot. It is made by the traditional method and matured for many years on the lees, which lends its depth, fine bead and savoury layers beneath the fruit.
The colour is a pale copper to salmon pink with a very fine, persistent bead. The nose brings strawberry, raspberry and cherry together with toasted bread and a praline, faintly smoky note. The palate is dry and layered, the red fruit set against a creamy mousse, a red-currant tang and a long, mineral finish. Serve at around ten to twelve degrees in a white-wine glass. It works with duck, salmon, game birds and mature cheeses.
