Description
Dom Pérignon is the prestige vintage cuvee of Champagne Moët et Chandon, and Plenitude 2, or P2, is a special release from a single year that has spent well over a decade maturing on its lees before disgorgement. This second plenitude, from the 2006 vintage, is the same wine given far longer bottle age, a maturation that transforms the fruit into deeper, toasted and nutty character while keeping a taut line of acidity. It is made by the traditional method and finished at brut dosage.
The colour is a deeper gold with a very fine, energetic bead. The nose is layered, moving from baked apple and quince to toasted bread, hazelnut, praline and a touch of honey. The palate is dry, intense and long, the mature fruit balanced by bright citrus-peel acidity and a saline, extended finish. Serve at around ten to twelve degrees in a white-wine glass so the aromatics open. It suits richer dishes such as lobster, poultry in cream and aged hard cheeses.
