Description
Dom Pérignon is the prestige vintage cuvee of Champagne Moët et Chandon, produced only in years judged capable of carrying the name and always from a single harvest. This brut from the 2010 vintage comes in the Lady Gaga collaboration gift box, though the wine itself is the standard vintage cuvee, a blend of Chardonnay and Pinot Noir. It is made by the traditional method and matured for many years on the lees before disgorgement, the long ageing giving its depth, fine mousse and toasted complexity.
The colour is a bright gold with a very fine, steady bead. The nose moves from apple and pear to toasted bread, hazelnut and a hint of praline. The palate is dry and precise, the orchard fruit carried by a creamy mousse and a firm citrus-peel acidity that runs into a long, savoury finish. Serve at around ten to twelve degrees in a white-wine glass so the wine can express itself. It suits shellfish, poultry, richer fish and aged cheeses.
