Description
Dom Pérignon is only ever made as a vintage wine, and the 2015 takes Chardonnay and Pinot Noir from a single harvest across the Champagne crus. The wine follows the traditional method, with the second fermentation in bottle and then a long maturation on the fine lees in the deep chalk cellars. That extended autolytic ageing is central to the style, building the toasted bread and nutty layers and the creamy texture that sit under the fruit. The dosage is set low in the brut range so the wine stays dry, letting the vintage character and the chalk driven minerality lead.
The colour is pale gold with a very fine, persistent bead. The nose moves from white peach, apricot and citrus peel through white flowers to toasted bread, hazelnut and a distinct saline, chalky note. On the palate it is precise and layered, ripe fruit carried by firm acidity and a mineral, savoury depth to a long, dry finish. Serve at 9 to 11 degrees in a white wine glass so the aromatics have room. It suits shellfish, fine white fish and mature hard cheeses.
