Description
Dom Pérignon makes only vintage Champagne, releasing each year separately to reflect the character of that harvest. The 2013 is a blend of Pinot Noir and Chardonnay, made by the traditional method with an unusually long maturation of around eight years on the lees. That extended autolysis is what gives the wine its layered aromatics and fine, integrated perlage. The magnum is regarded as an ideal size for ageing Champagne, as the wine develops slowly and evenly in the larger bottle. The dosage is Brut, leaving the structure exposed and precise.
The colour is bright with a long lasting, precise bead. The nose is complex, with mirabelle, apricot and white peach alongside orange blossom, and spicier hints of pepper, cardamom and ginger over a mineral, toasted edge. The palate balances lively acidity with a full, supple depth, closing on a subtle salty, almost briny note and a long, exact finish. Serve at around 10 degrees in a white wine glass to let it open. It suits lobster and scallops, fine fish dishes, poultry and mature cheese.
