Unusually for Maison Ferrand it is bottled unsweetened, letting the experimental peated-cask finish speak rather than any dosage.
From molasses through a Guyanese pot still, the spirit brings fruit and burnt sugar, while the ex-whisky cask layers a distinct peat and smoke over the top, the palate fruity and roasted with that burnt-sugar base. Drinkers who enjoy whisky-cask rums find the peated influence forward, even assertive, sitting alongside the Demerara core.
