This is a 2011 Diamond pot still rum, single cask, finished in a Big Peat Islay malt whisky cask for Warehouse Number One and bottled by Maison Ferrand at twelve years and 49 percent. Unusually for Maison Ferrand it is bottled unsweetened, letting the experimental peated-cask finish speak rather than any dosage.
From molasses through a Guyanese pot still, the spirit brings fruit and burnt sugar, while the ex-whisky cask layers a distinct peat and smoke over the top, the palate fruity and roasted with that burnt-sugar base. Drinkers who enjoy whisky-cask rums find the peated influence forward, even assertive, sitting alongside the Demerara core. It is a crossover bottling rather than a classic still showcase, of most interest to those who want smoky Islay character threaded through an aged, dry Guyanese pot-still rum.
