Debowa Wodka Holzfass is an oak-rested grain vodka from the Debowa Polska distillery, whose name means Polish oak. Distilled from Polish grain and spring water, it then sits in contact with oak, picking up a soft colour and notes of wood and vanilla. Bottled at 40% in its barrel-shaped bottle, it is one of the more characterful Polish vodkas.

Debowa Polska built its house style around oak, the meaning of debowa, and the Holzfass, or wooden barrel, bottling takes that idea furthest. The spirit is distilled from Polish grain and crystal-clear spring water into a clean, harmonious base, then rested in contact with oak wood. That contact is what sets it apart from a standard neutral vodka: the wood lends a soft natural colour and draws out notes of vanilla, honey and light sweetness, in the same way oak shapes a young whisky, while the grain keeps a clear underlying structure. The barrel-shaped bottle makes the point visually.
The nose is delicately woody with vanilla, honey and cereal. The palate is soft, round and mild with a fine sweetness, oak and a hint of spice, and the finish is long and warm with a subtle woody note. With that vanilla-and-oak character it makes an interesting twist on a White Russian: stir it over ice with coffee liqueur and a float of lightly whipped cream, where the wood and vanilla in the vodka pick up the coffee and the cream rounds it all off.
