    An 8 year old Deanston from the bottler Dràm Mòr, 2013, at 55.3%. Pear, apple and a soft vanilla fill the glass, with a dry, nutty, savoury depth from the cask. It is the only distillery in Scotland to make all its own power from the river. It runs an open top mash tun and long ferments for a fruity make. This is a green, honeyed Highland malt with a waxy heart.

    The bottler Dràm Mòr bottled this Deanston, an 8 year old, distilled in 2013, from cask 1013, bottled at 55.3%, one of 249 bottles. Deanston is a Highland single malt, the old cotton mill at Doune turned distillery in 1966. It was mothballed in 1982 and revived in 1990 under Burn Stewart.

    Run through the bulbous stills with their upward sloping lyne arms, the long ferment building a fruity, estery character. Finished in a Palo Cortado cask, the wood building over the green, waxy fruit. In these extractive early years the oak gives vanillin as vanilla and oak lactones as coconut over bright green apple and honey. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Long ageing turns the fresh fruit towards honey, dried fruit and a soft spice. Active wood frames the fruit without overwhelming the soft Highland spirit.

    At its natural 55.3% it is concentrated. Honey, malt and a gentle clove, with a dry, nutty, savoury depth from the cask. It is fruity and waxy, the malty spirit shining through. The finish is rounded, honeyed and gently spiced. This is the cotton mill malt of the River Teith.
