Description
One of the Kylebeg Wood editions in Midleton's Dair Ghaelach series, which finishes single pot still whiskey in hogsheads made from single native Irish oak trees. This 2021 bottling draws on Tree 5 of Kylebeg Wood in Co. Wicklow, distilled by Irish Distillers in Co. Cork and released at cask strength for the Netherlands.
A first maturation in American bourbon barrels gives vanilla and soft fruit before the virgin Irish oak finish pushes the whiskey toward clove, dark chocolate and a resinous, tannic spice. The mash of malted and unmalted barley keeps its creamy, peppery pot still texture underneath, and at 56% undiluted the oak carries a firm, warming and long finish.
