Description
A Kylebeg Wood bottling in Midleton's Dair Ghaelach range, the distillery's study of native Irish oak in which single pot still whiskey is finished in casks from individual trees. This 2021 release takes its wood from Tree 4 in Co. Wicklow, distilled by Irish Distillers in Co. Cork and bottled at cask strength for the Netherlands.
The whiskey is matured first in American bourbon oak, then finished in virgin Irish oak whose tight grain brings extra tannin and spice. Clove, dark chocolate and baking spice sit over a sappy, resinous oak note and the peppery, oily pot still base of malted and unmalted barley. Undiluted at 56%, it finishes dry, long and warmly spiced.
