Midleton's Dair Ghaelach range finishes single pot still whiskey in hogsheads coopered from individual native Irish oak trees, and this release draws on Tree 5 of Knockrath Forest in Co. Wicklow. Distilled by Irish Distillers in Co. Cork, it was bottled in 2019 at cask strength for the European market.
A first maturation in American bourbon oak gives vanilla and soft fruit before the finish in virgin native Irish oak adds clove, dark chocolate and a sappy, resinous spice. The tight grained wood lends a firm tannic grip, while the mash of malted and unmalted barley keeps the peppery, oily pot still texture underneath. At 56.5% and undiluted, it finishes long, dry and spiced.
