Description
From the Knockrath Forest chapter of Midleton's Dair Ghaelach range, which finishes single pot still whiskey in casks made from single native Irish oak trees. This 2019 bottling draws on Tree 2 of Knockrath Forest in Co. Wicklow, distilled by Irish Distillers in Co. Cork and released globally at cask strength.
Matured in American bourbon barrels and finished in a virgin native Irish oak hogshead, the whiskey pairs chocolate and dried fruit with bright citrus, fresh orchard fruit and malt, edged by an old wood, resinous note. The pot still mash of malted and unmalted barley keeps its oily, peppery spice, and at 56.3% undiluted the Irish oak lends a firm, tannic backbone and a long, spiced finish.
