Description
Dair Ghaelach is Midleton's exploration of native Irish oak, finishing single pot still whiskey in hogsheads coopered from individual trees. This edition takes its wood from Tree 4 of Kilranelagh Wood in Co. Wicklow, with the spirit distilled by Irish Distillers in Co. Cork and bottled in 2023 at cask strength for the Irish market.
Matured first in American bourbon barrels and then finished in virgin Irish oak, the whiskey gains a spicier, more tannic profile than standard Midleton, with clove, ginger, dark chocolate and a green, resinous oak note. Underneath sits the peppery, oily texture of the malted and unmalted barley mash. At 57.1% and undiluted, it finishes long, dry and warmly spiced.
