Description
From Midleton's Dair Ghaelach series, a project that finishes single pot still whiskey in barrels made from single native Irish oak trees. This bottling is drawn from Tree 2 of Kilranelagh Wood in Co. Wicklow, distilled by Irish Distillers in Co. Cork and released in 2023 at cask strength for the Irish market.
The whiskey begins in American bourbon casks and is finished in virgin Irish oak, whose closer grain lends stronger tannin and spice than the usual American or European oak. Look for dark chocolate, clove and baking spice with a resinous, sappy oak character over the creamy, oily pot still base. Bottled without dilution at 56.9%, it shows the fuller, more structured side of triple distilled Midleton.
