Midleton's Dair Ghaelach range bottles single pot still whiskey finished in casks coopered from individual trees of native Irish oak. This release comes from Tree 1 of Kilranelagh Wood in Co. Wicklow, distilled by Irish Distillers in Co. Cork and issued in 2023 at cask strength for the Irish market.
A first maturation in American bourbon barrels gives vanilla and soft fruit, before a finish in virgin Irish oak hogsheads pushes the whiskey into clove, ginger and dark chocolate territory, with a resinous, tannic edge from the tight grained wood. The pot still mash of malted and unmalted barley keeps its peppery, oily texture beneath, and at 57% undiluted the spice and oak carry a long, warming finish.
