Description
An early Dair Ghaelach release from 2015, part of Midleton's exploration of native Irish oak in which single pot still whiskey is finished in casks made from individual trees. This bottling draws on Tree 9, distilled by Irish Distillers in Co. Cork and released across Europe at cask strength, with around 12,000 bottles filled from the batch.
After a first maturation in American bourbon oak, the whiskey is finished in virgin Irish oak hogsheads whose tight grain drives a spicier, more tannic character than standard Midleton. Clove, dark chocolate and baking spice sit over a resinous oak note and the creamy, peppery pot still base of malted and unmalted barley. Bottled without dilution at 58.2%, it is a robust early statement of the Dair Ghaelach idea.
