A Dailuaine of a 23 year old from the Italian bottler Wilson and Morgan, at 55.4%. Malt, dried fruit and a savoury depth fill the glass, with dried fruit, fig and walnut from the cask. It once had its own railway siding and a little locomotive, the Puggy. Founded in 1852, it was the first distillery to use the pagoda roof. This is Dailuaine’s heavy, meaty Speyside style.

A 23 year old Dailuaine from the Italian bottler Wilson and Morgan, distilled in 1997, from cask 15584-15585, bottled at 55.4%, one of 493 bottles. Dailuaine is a robust Speyside distillery at Carron, making a full bodied malt mostly for blends. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
It was worked through the big stills for a meaty, malty spirit, for a big, full Speyside spirit. Ex-Sherry wood added a deep dried fruit richness to the full bodied malt. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, meatier fruit. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. The rich, full bodied spirit takes cask flavour well, especially sherry wood.
At a hearty 55.4% it carries real weight. Malt, dried fruit and a rich spice, with dried fruit, fig and walnut from the cask. A baked fruit and a warm spice lift it. A long, full finish carries a savoury depth. This is a rich, dried fruit laden Speyside single malt.
