Description
A Dailuaine of a 10 year old chosen by the Italian bottler Wilson and Morgan, distilled in 2013, from cask 312921-312923, bottled at 46%, one of 778 bottles. Dailuaine sits at Carron on the Spey, a big, sherried Speyside malt rarely seen on its own. In 1889 it became the first distillery to use the pagoda roof, the Doig Ventilator designed by Charles Doig.
The spirit was made in large copper stills for a rich, robust make, building the heavy Dailuaine style. An Oloroso hogshead lent fig, raisin and a savoury, nutty depth, the heavy spirit soaking it up. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. Maturation in the cool north east keeps the rich spirit balanced over the years. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron. Dailuaine's heavy, malty make is prized by blenders for the body it gives.
At 46% it is clean and soft. A rich, full bodied sweetness, with dried fruit, fig and walnut from the cask. Dried fruit, malt and a savoury spice fill the middle. The finish is long, rich and savoury. This is a rich, malty Speyside single malt.
