Roasted oak, leather, dark chocolate and prune fill this 33 Year Old Enmore Versailles from The Colours of Rum, a dry, dark KFM single cask off the wooden pot still, intensely woody and rewarding at 48.3 percent.
Description
The Colours of Rum bottled this single cask carrying the KFM marque from the 1991 vintage in its Foundations line, thirty-three years old. KFM is a Versailles era mark off the wooden pot still, and despite the Enmore Versailles labelling the profile is firmly that bracing, timber led wooden pot character, here aged into a dark, dry old rum.
Molasses based and matured in ex-bourbon oak, it is intense and driven by wood. The nose gives dried fruit, toasted oak, allspice, rubber and plum, opening to subtle dried fruit with time, while the palate brings coffee, barrel, allspice and roasted notes. The finish stays woody and tannic with liquorice, leather, dark chocolate and a herbal touch. It leans firmly oaky without turning astringent. At 48.3 percent it is a charming, concentrated old Enmore Versailles for drinkers happy to go deep into wood.
