Description
Cask 7560 is one of Clonakilty's Special Limited Edition single casks, bottled for an event in a run of 265. The recipe is a bold one, Irish single malt shaped by both stout and Madeira casks, the sort of cask experiment the Co. Cork house has made its signature while its own spirit matures.
The stout wood contributes dark chocolate, coffee and roasted malt, while the Madeira brings raisin, burnt orange and a tangy, caramelised sweetness. At an undiluted 54% the two influences arrive together, thick and rich, and water splits them apart into cocoa on one side, dried fruit on the other, over a honeyed malt core.
