Description
This is Clonakilty's own single pot still whiskey, distilled from a mash of malted and unmalted barley grown on the family farm above the Atlantic in west Cork. It marks the young distillery's arrival at its central ambition, its own make, after years of cask work on sourced stock, bottled here at 46% for the Netherlands.
Maturation spans ex-bourbon, Oloroso and Amontillado sherry casks, an unusually sherry rich recipe for a house pot still. Vanilla and orchard fruit from the American oak meet fig, walnut and a saline, nutty edge from the two sherry styles, all over the peppery, gingery spice and oily texture that the unmalted barley provides.
