Clonakilty distills its single pot still spirit from malted and unmalted barley grown on the family's coastal farm in Co. Cork, and this release singles out one cask, number 9465, finished in a Port pipe. It was bottled for the Dutch market in an outturn of 914 bottles.
After first maturation in ex-bourbon casks, the big Port pipe added its colour and dark red fruit before bottling at a full 53%. Pepper, ginger and that oily pot still texture sit underneath plum and berry sweetness, with vanilla from the American oak in between, and the strength keeps everything vivid, well suited to a drop of water.
