Description
Clonakilty began distilling on Cork's south coast in 2019, using barley grown on the Scully family farm, and this bottling captures that first vintage year of its own single pot still spirit. It is a single cask release, cask 5621, bottled for the European market in a tiny outturn of 86 bottles, a snapshot of a young distillery's earliest make.
The spirit matured in ex-bourbon casks before a finishing period in ruby Port wood, and it was bottled at a full cask strength of 57.9%. Expect the peppery, gingery prickle that unmalted barley brings, wrapped in vanilla from the American oak, with the Port adding red fruit and a gentle winey sweetness, all shaped by slow maturation in Clonakilty's warehouse on the Atlantic shore.
