Decadent Drinks bottled this 2007 Clarendon under its Rum Sponge series, a single cask at 57.1%, unsweetened and fifteen years old. Rather than the estate's usual heavy funk, this one takes a greener, herbal turn, a characterful detour for drinkers who know Clarendon and want something off the expected path.
Molasses fermentation and pot still distillation underpin it, but the nose leads with anise, fennel, lemon and a fresh herbal lift. The palate keeps that anise driving, with tropical fruit, pepper and mint alongside, and the finish brings tea, vanilla, more pepper and a vegetal note. There is fruit and power here, but the herbal, almost botanical character is what sets it apart. Aged in ex-bourbon oak, it stays bright and punchy, an original and rewarding Clarendon for anyone after a fresh angle on the island.
