Description
Chichibu is the small Saitama distillery founded in 2008 by Ichiro Akuto, heir to the Hanyu legacy and creator of the Ichiro's Malt range. Its signature is a vibrant, fruit-forward new make that responds quickly to wood, and the Paris Edition series, released annually for La Maison du Whisky tasting events in France, showcases that versatility in single-bottling form. This 2019 release was filled at 6 Years Old and bottled at cask strength 50.5%.
Maturation drew on both Ex-Bourbon and mizunara, the latter a porous Japanese oak that brings slow-building sandalwood and incense alongside the barrel's sweeter vanilla grain. The notes lean toward cooked fruit, honey, yeasty biscuit and fresh citrus, with the mizunara adding a subtle aromatic depth that speaks to the distillery's commitment to native wood. It is lively and layered in the way that young Chichibu at cask strength characteristically is.
