Chichibu distillery in Saitama, founded in 2008 by Ichiro Akuto, uses new American virgin oak in a portion of its maturation programme, producing a style markedly different from its well-known Ex-Bourbon releases. Cask 2856, a 2013 vintage selected by La Maison du Whisky for France and bottled in 2022, spent nine years in a virgin oak barrel, an extended maturation even by Chichibu standards for this wood type.
Nine years in new wood have built a firm, structured character: drying tannins, fresh wood aroma and a spiced vanilla note from the virgin American oak sit alongside the distillery's inherent fruit and cereal sweetness. The interplay between the assertive cask and Chichibu's naturally vivid new make produces a complex, layered result that rewards patience. At 61% cask strength, the delivery is full and warming, with a long, spiced and pleasantly drying finish.
