CDI Darsa 2011 is a single cask Guatemalan rum bottled by Compagnie des Indes, drawn from the Darsa distillery and presented in the house's natural, unsweetened style. That dry framing is worth noting, as Guatemalan rum is often associated with markedly sweet, solera-built bottlings.
Distilled in 2011 from molasses and aged twelve years in ex-bourbon, it should drink in the Central American mould of vanilla, caramel and baking spice, but lean and clean rather than honeyed. Bottled at a cask strength 54.9% with nothing added, this is a fuller, more transparent reading of Guatemalan rum than the country's best-known names.
