Casoni Amaretto Liquore comes from Casoni, founded in 1814 in Finale Emilia, Italy, a house that builds liqueurs, aperitifs and digestifs around natural herbs, spices and citrus. This amaretto follows a family recipe in which sweet and bitter almonds are selected and worked into an extract, giving the liqueur its characteristic almond character. It sits at a gentle 21.5%, softer than many amarettos.
The nose is intense almond, and the palate carries almond with notes of cocoa and vanilla, closing long on the palate. Behind the bar it is a nutty sweetener with a marzipan note: it carries an Amaretto Sour, turns a Scotch into a Godfather, and rounds out coffee or a stirred drink, while its lower strength makes it easy to pour generously. It works equally well over ice and in desserts. Serve it neat, over ice, or in the mix as the almond note most guests already know.
